Pumpkin muffins with chocolate covered raisins

What's my favorite fall baked good? Pumpkin muffins with chocolate covered raisins.

Ingredients:
3 Cups of sugar
1 Cup of oil
4 Large eggs
3 1/3 Cup of flour
2 teaspoons of baking soda
1 1/2 teaspoons of salt
1 teaspoon of cinnamon
1 teaspoon of nutmeg
2/3 Cup of water
1 Can of pumpkin
2 Cups of chocolate covered raisins.

Put it all together:
To start, put together ingredients. I like to put the spices (salt, cinnamon, baking soda, and nutmeg) in a small bowl first. Then combine your dry ingredients (sugar and flower) in a large bowl and in another small bowl mix oil, eggs, and water.

Next, mix together your dry ingredients and your spices.


With your hands, create a hole in the center of your dry mixture. Then add the small bowl of wet ingredients.


Once mixed, add your pumpkin.


Next add your chocolate covered raisins.


Add your mixture to a muffin pan.


And now you have yummy muffins.

Raspberry tiramisu

This is super easy and super yummy! (and kind of bad for you)

Ingredients:
1 Cup of heavy cream
1 Cup of mascarpone
4 Tbsp of sugar
1 Lemon
1 Cup of raspberry jam
1 Pt. of raspberries
About 3 boxes of ladyfingers

Put it all together:
Whip the heavy cream and sugar together. Then, fold in the mascarpone as well as some zest from the lemon.


In a separtate bowl, combine the raspberry jam and juice from the lemon.


Now comes the fun part.
Find a loaf pan and layer the bottom with ladyfingers. Once the ladyfingers are in, top with some of the raspberry jam mixture. Only enough to cover the ladyfingers. Then sprinkle on some of the raspberries.


Next, layer on the cream/mascarpone mixture. I may have been a little messy with mine.


Now repeat all the layers to the top and sprinkle on left over lady fingers.

I've been told that I am one of the pickiest eaters on the planet. This I cannot deny. Everyone has a quark, right?

Anyway, it just so happens that I like to cook and bake. Most of the time it is stuff I enjoy eating, but sometimes not. Regardless of my eating preferences, I tend to get decent reviews and am often requested to provide the recipe. And that leads me to this very blog.

Here I will provide some of my favorite recipes. These are often very easy to make. I cook in a small, galley kitchen in my apartment with limited counter space. Trust me if I can manage to make these recipes you can too. And if I eat them, then it is a recipe bound to impress pretty much everyone. 

I wonder what will be first? hmmm....
